Hello hello guyys ,welcome back to my blog. Finally we meet again ,after one week. Sir Cule said we are come back again to being digital people,Wkwkwk.This week it's so different from another week's ago. This week we must come at 07' o'clock,especially for who lift in drom and gontang they must come at 06 o'clock .
Why,why ,why ? Because this week we got a new materi that is "Breakfast". There are 4 kinds of breakfast ,that are continental breakfast,english breakfast,american breakfast and the last is Indonesian breakfast.My group got English breakfast, we must prepare for muffin and english muffin. To make this muffin ,we use another method ,that is creaming method. Yaahh Alhamdulillah everything is running well.
Ohyeahh on this practice ,Sir Ical didn't showing this materi. Because Sir Ical want ,we are learning to independent. We must to search and search. It's good. Hope we can past this week well. Aamiin. After doing like usually we always doing general cleaning before go home.It's so important to always keep cleaning our lovely kithen. So don't forget to do this things.

English Muffin
Ingridients:
1.Water 375 gr
2.Yeast 8 gr
3.Hard flour 500 gr
4.Sugar 8 gr
5.Salt 8 gr
6.Nonfta milk solids shortening 12 gr
7.Shortening 8gr
How to make :
Mixing :
Straight dough method 20-25 minutes at second speed. This dough is intentionally overmixed to develop its characteristic coarse texture. Because of this long mixing time,use twice your normal machine friction factor when calculating water temperature for this season, and because of the low fermentation temperature, it is usually necessary to use very cold water or part crushed ice
Fermentation:
Dough temperature 70 derajat farenheit . Ferment 2 atau 3 hours
Scalling and makeup:
Because this dough is very soft and sticky, you must use plenty of dusting flour. Scale at 1.5 oz (45 gr) per unit. Round and relax the units,the flatten with the palms of the hand. Place on cornmeal -covered tryas to proof.
Baking :
Bake on both sides on griddle at low heat.
